Taxi & Run up training

I just got back from taxi and runup training up in Dallas. We had 8 hours (4 hours a night) training in Southwest Airlines' flight simulators. We had a blast and most importantly, learned a few things. We finished each night at 11 P.M. Wednesday evening there wasn't any maintenance scheduled on the simulator we were using, so we got to fly the simulator. I crunched the aircraft (tilt) the first time, but landed her the second time.
Each simulator has a rubber chicken hanging from the aft right corner. I sure would like to find out the tradition behind this.

Do they rent out time on that thing, by any chance?

I don't think you can rent out time in one of SWA's. But for $00000, you can get a jet airliner type rating and I am sure it includes simulator time.
